Last Taste of Summer and Lemons

I know we are already for fall and all, but I made one last ditch effort for some festive summer treats... all about lemon.


Goat yoga is tomorrow at the farm and Labor Day is Monday. It's time to wear white for the last time til spring (um unless you're a rule breaker like me and love you some winter white- um hello the snow didn't get that message either). It's the last time you'll see fresh watermelons roadside and fresh market summer fruits. So, I thought I'd take it up a notch this weekend with some fun lemon inspired recipes. And better yet, I'm using essential oils for them! Oils in food and drinks?! Yep, you heard me! We will be diving deep into all the things that you can use oils for over the next few months, but for now, just take my word that Young Living oils {and only Young Living} MAY be used internally.


First up is Lavender Lemonade. This recipe is fresh from the Farm Day at Young Living in Utah.

Lavender Lemonade



Ingredients

🍋 7 Lemons - juiced

🍋 2 Limes - juiced

🍋 1 Large Can Pineapple Juice

🍋 1 drop Young Living Lavender Vitality essential oil

🍋 14 Cups Water

🍋 1 Cup Blue Agave


Instructions

  1. Combine pineapple, lemon, and lime juice, agave, and Lavender Vitality in a large glass pitcher.

  2. Add water.

  3. Stir until well mixed.

  4. Serve over ice.




Lemon Vitality Bars

Crust Ingredients

🍋 1 Cup Softened Butter

🍋 1/2 Cup Powdered Sugar

🍋 Dash of Salt

🍋 2 Cups Flour


Crust Instructions

  1. Combine all crust ingredients. Mix well.

  2. Press mix into 9x13 in pan.

  3. Bake at 350 degrees for 15 minutes.

  4. Let cool slightly while making filling.


Filling Ingredients

🍋 4 Eggs Beaten

🍋 1/4 Cup Flour

🍋 2 Cups Sugar

🍋 20 drops of Young Living Lemon Vitality Essential Oil


Filling Instructions

  1. Combine flour and sugar.

  2. Mix in beaten eggs and lemon essential oil.

  3. Pour batter onto slightly cooled crust.

  4. Bake at 350 degrees for 25 minutes.

  5. Let cool and sprinkle with powdered sugar.

  6. Store at refrigerator to maintain form.
