Bourbon Glazed Salmon

Whether you are a fish fan or not, this simple marinade is perfect for meat of any main course. It would also be delicious for veggies.

Bourbon Glazed Salmon

I LOVE Publix Bourbon Salmon, but when we moved to the country I realized I wouldn't be able to grab those marinated filets frequently, since the closest one is an hour away. Now, I don't have that issue because I can make it on my own! I'm sure this is going to become one of your faves too!


*Requires marinating time


Ingredients:

6 Tablespoons brown sugar

6 Tablespoons bourbon (can substitute apple juice if desired)

4 Tablespoons low-sodium soy sauce

2 Tablespoons freshly peeled and grated ginger

2 Tablespoons fresh lime juice

6 garlic cloves, minced

½ teaspoon freshly ground black pepper

4 (6 ounce) skinless salmon fillets (can substitute with chicken tenderloins if you don't like fish)

grilling spray

¼ cup thinkly sliced green onions


Instructions:

  1. Combine the ingredients in a bowl and stir until thoroughly combined. Reserve 1/4 cup of marinade to top later.

  2. Place salmon fillets in a ziploc baggie and add all of the marinade. Remove as much air as you can from the bag and seal.

  3. Allow the fish to marinate for 1½ hours in the refrigerator, turning occasionally.

  4. Light and heat grill to medium.

  5. Coat grates with grilling spray.

  6. Add fish and baste in marinade on grill; cook salmon 4 minutes on each side or until fish flakes easily.

  7. Remove from grill and drizzle any reserved sauce from the pan over the fillets.

  8. Add thinly sliced green onions.


For sides, we add sweet potatoes and pan seared garlic asparagus and spinach.
